LIME POPPY SEED CAKE WITH QUARK CREAM_

Preparation:
Wash the lime, grate the peel and cut in halves. Squeeze the lime. Beat the butter, sugar, vanilla sugar, agaDAMPFMOHN®, lime zest and half of the juice using the mixer until creamy. Add the eggs one by one. Mix the flour with the baking powder and fold it in. Fill the batter in a greased springform pan, smooth the surface and bake for approx. 20 minutes at 180°C in the preheated oven. Leave the cake to cool down.

Soak the gelatine in cold water for the cream. Wash the second lime and cut it in halves. Grate the zest and squeeze the juice of one half. The other half serves as decoration for the cake. Whip the cream until stiff.

Mix the quark, sugar, lime zest and juice of the two limes. Squeeze the gelatine and dissolve it with 4 tablespoons of the quark cream on the stove.

Add the dissolved gelatine to the quark cream, mix and fold in the cream. Fill the quark cream in the cooled pan and smooth the surface. Put in a cool place for at least 2 hours. Garnish with pistachios, poppy seeds and lime slices.

200g whipping cream
5 gelatine leaves
100g sugar
Chopped pistachios and poppy seeds
for the decoration
