Coriander is used in cooking as both a herb and whole fruit. As their tastes differ greatly, they are used for different purposes. The 2-3 mm large coriander fruits are dried and then briefly roasted.

Where possible, they are ground fresh, otherwise the low-volatility bitter substances quickly outweigh the volatile flavourings. Ground seeds are used to season bread, pastries, cabbage dishes, pulses and squash. Coriander is also a component of spice mixtures such as curry powder, curry paste and gingerbread spice.

Not only does aniseed look beautiful, it gives bread and pastries a unique and delightful nuance of flavour.
The versatile spice caraway is often used in cakes and rye bread, among many other things.
